Potato-leek soup is great and all, but why not spice it up a bit? 🌶️ This one gets a kick from classic Thai flavors like lemongrass, chili paste, and ginger. We’ve also added tofu for a pop of protein.

2 cup Leeks – cleaned and sliced into 1/4-inch rounds
3 cup Yellow Potatoes – peeled and quartered
1 cup Firm Tofu – cubed
1 tsp Ginger, fresh
2 Garlic, clove
1 tbsp Lemongrass – minced
1 1/2 tbsp Thai Chili Paste
3 cup Vegetable Broth, low-sodium
1 cup Water
1/4 cup Avocado Oil
Salt – to taste
Black Pepper, ground – to taste
Cilantro – to garnish

Heat 2 tablespoons avocado oil in a medium pot over low heat. Add leeks, potatoes and cook until leeks soften, about 7 minutes. Stir often to keep mixture from sticking. Add the remaining avocado oil, along with ginger, garlic, lemongrass, Thai chili and tofu pieces. Stir to coat evenly. Add the vegetable broth, water, salt and pepper to taste. Raise heat to medium-high, bring broth to boil, then reduce heat back to low. Partially cover the pot with a lid and allow to simmer for 8 to 10 minutes until potatoes are fork tender. Remove from heat and allow to cool for 20 minutes. Transfer the soup mixture into the magic bullet Pitcher and attach the lid. Load and lock the Pitcher onto the motor base. Blend on LOW for one full cycle. Blend a second time if needed or until it reaches desired texture. Transfer to bowls and garnish.

Ingredients
1 cup Mango, frozen chunks
1 cup Strawberries, frozen
3/4 cup Peach, frozen, unsweetened
3/4 cup Cherries, frozen
2 medjool Dates, pitted
2 tsp Vanilla Extract
3 cup Almond Milk, vanilla, unsweetened
1 cup Coconut Water

A little sweet, a little smokey, this Mezcal Melon

A little sweet, a little smokey, this Mezcal Melon Marg 🍈 understands the power of a little mystery. Who knew melon could be so alluring?

2 cup Cantaloupe – cubed
1 cup Honeydew Melon – cubed
2 fl oz Lime Juice – fresh
3 fl oz Tequila – mezcal
1 1/2 fl oz Cointreau
3 tbsp Honey
3 cup Ice – divided

Add the melon, lime juice, Cointreau, and honey to the Pitcher, along with 2 cups of ice. Attach the lid and lock the Pitcher onto the motor base. Start the blender on the LOW speed. Once ingredients are mostly combined, briefly switch to HIGH to finish blending. Add the final cup of ice and blend on high, until smooth. Rim a glass with lime juice and salt, if desired, then pour in your cocktail. Garnish with mint, small slices of melon, melon balls, or lime slices. Enjoy! Note: Freeze melon chunks beforehand to get a frostier consistency.

🥭 Dreamy, creamy, and full of mouthwatering mango flavor, this easy Mango Gelato goes for the gold.

Ingredients
4 cup Mango, frozen chunks
3 tbsp Maple Syrup
1 cup, fluid (yields 2 cups whipped) Heavy Whipping Cream

Add all ingredients into the magic bullet Pitcher and attach the lid. Load and lock the Pitcher onto the motor base. First, pulse ingredients 4 times to begin breaking down. Next, blend on LOW until ingredients start to come together, stopping to scrape down the sides of the blender if any ingredients get stuck. Add 1/8 cup water if needed. Once ingredients are mostly combined, switch the speed to HIGH until mixture is completely smooth. Pour into an airtight, freezer-safe container and freeze for at least 4 hours. When ready to serve, use an ice cream scoop to transfer gelato to a bowl. Garnish with your favorite toppings, if desired, and enjoy!
